Delicious kiwi upside down cake


3 peeled kiwis

1 Tbsp of oil

1/2 cup of brown sugar

3/4 cup of refined flour

1 tsp of baking powder

1/2 cup of butter

1/2 cup of powdered sugar

2 eggs

1 tsp of vanilla essence

Glazed cherries, as required


Preheat your oven to 180° C.

Grease the bottom aluminium cake tin with oil. Spread the brown sugar all over of the base of the tin.

Slice 2 kiwis into thin roundels form and arrange them nicely over the brown sugar so as to cover the entire base.

Put through a sieve refined flour and baking powder into a bowl.

Take & Cut 1 kiwi into small pieces and mix them all in with the refined flour mixture.

Place the butter in a large mixing bowl, add sugar and beat with a hand blender till the mixture gets creamy and fluffy.

After that Add eggs and vanilla essence and beat it again well blended and light. Add the flour with the yummy kiwi pieces and fold in well.

Put the whole batter over the kiwis in the cake tin, tap the tin lightly & cruelly. Then level the batter with a spatula in the tin .

Keep the tin in the preheated oven and bake for at least 35 minutes.

  1. after the timer gets off Take the tin out of your oven and turn it over on a serving plate. Decorate with cherries and keep it in the refrigerator till it cools down. Later Cut it into wedges and serve it to your loved ones .
