Mouth watering Chicken Quinoa Biryani
2 cups of boiled and strained quinoa
2 finely sliced onion
1 chopped tomato
3 slightly one side open green chilli
1 Tbsp of ginger garlic paste
1/4 cup of chopped mint leaves
1/4 cup of chopped coriander leaves/Cilantro
1/2 cup of fresh beaten yogurt/curd
1/2 tsp of turmeric powder
1/2 tsp of chilli powder
Salt for taste
250 Gms of chicken cut into pieces
1/4 tsp of garam masala powder
1/4 tsp of ginger garlic paste
1 Tbsp of yogurt/curd
1 tsp of chilli powder
1 tsp of coriander powder
1/2 tsp salt
3 Tbsp of oil
4 piece of clove
2 stick of cinnamon
1 small bay leaf
3 piece of Cardamom
Wash the chicken properly and drain the excess water. Marinate the chicken with the ingredients and cover it, keep aside for at least 30 minutes.
Put and Heat oil in a pressure cooker, add the tempering ingredients one by one then add onion, green chilli, mint leaves, cilantro, sprinkle little salt and saute for at least 1-2 minutes.
Add ginger garlic paste and sauté cook till the raw smell leaves.
Then add tomato and sauté cook till it turns soft and mushy.
Now add the marinated chicken, chilli powderand also turmeric powder and sauté cook for 2-3 minutes more.
Cover it and cook it for 6-7 minutes or till the chicken gets 3/4th cooked.
Add 1 cup of yogurt, 2 or 3 cups of water, enough salt according to your taste and allow it to boil.
Now once it starts boiling, reduce the flame and cook for another 3 more minutes.
Layer with quinoa, toss and enjoy Chicken Quinoa Biryani with your loved ones.
You can also eat it with raita and with a squeeze of lime on top of it.
